[SimplifyMe] (Shrimp) in Coconut Curry---w/ Rice

 

SHRIMP IN COCONUT CURRY                        Makes 4 servings.

Shrimp in a chile, carrot, onion, ginger, coconut curry sauce served over rice.

2 serrano chiles, halved and seeded
1 carrot, peeled and quartered
1 onion, quartered
3/4 oz ginger, peeled
2 tbs vegetable oil
13.5 oz can coconut milk
1 1/2 tsp curry powder
1 pound peeled deveined shrimp
Salt

Pulse serranos, carrot, onion and ginger in a food processor or blender. Heat oil in a skillet, add vegetables and cook to soften, 3 min. Add coconut milk and curry powder and bring to simmer, add shrimp and simmer until cooked through, 5 min. Season with salt and SERVE over rice...
