[SimplifyMe] Elegant (Side) Dish---w/ Carrots

 

SICILIAN STYLE CARROTS                    Makes 2 cups.

3 oil packed anchovies, minced
1 clove garlic, minced
2 tbs olive oil
1 1/2 pounds carrots, sliced
Salt
1/4 cup chopped parsley

Combine anchovies, garlic and 1 tbs oil. Toss carrots with 1 tbs oil and pinch salt. Roast at 425° for 25 min. Toss with anchovy sauce and parsley, then SERVE...
