| SPICY SICILIAN CHICKEN Makes 4 servings. Salt 8 skin on bone in chicken thighs 6 bay leaves 1/3 cup pitted olives 3 tbs oil 1 orange, halved 8 dried chiles, broken in half 2 onions, cut into wedges Heat oven to 500°. Put onions, olives, chiles and bay leaves on a rimmed baking sheet. Cut one orange half into wedges and add to the baking sheet. -Space chicken thighs skin side up on baking sheet on top of other ingredients. Drizzle with oil and squeeze juice from remaining orange half on top. Season with salt. -Roast until chicken is cooked through and skin is crisp and golden, 35 min. Discard bay leaves.
