[SimplifyMe] Indian Cheese (Pizza)---w/ Veggies

 

INDIAN PIZZA                                        Makes 4 servings.

1/4 onion, sliced
1/2 pound ground turkey
1 cup shredded mozzarella cheese
1/4 cup olive or vegetable oil
1/4 bunch cilantro or parsley, chopped
1 zucchini, halved lengthwise and cut crosswise 1/4" thick
1 1/2 tsp curry powder
Salt
1 jalapeno chile, seeds discarded, chopped
1 pound store bought whole wheat pizza dough, room temp

Invert a baking sheet onto bottom of oven, heat oven to 500°. Oil a second baking sheet and stretch pizza dough to fit the pan. In a food processor or blender, pulse cilantro, jalapeno and 2 tbs oil until a paste forms, season with salt. Spread paste on dough, then sprinkle with cheese. In a skillet, heat remaining oil.
-Add curry powder cook 30 seconds. Add turkey, season with salt cook breaking up meat until barely cooked, 2 min. Stir in zucchini and onion. Top pizza with meat mixture. Place baking sheet on preheated baking sheet in oven, bake until crust is golden, 20 min. then SERVE...
