[SimplifyMe] Flourless Date (Cake)---w/ Walnuts

 

FLOURLESS WALNUT DATE CAKE                   Makes 6 servings.

FOR THE CAKE:
3/4 cup chopped pitted dates
1 tsp vanilla
4 large eggs, separated
3/4 tsp cinnamon
Pinch of salt
2 tsp grated orange zest
1/2 cup sugar
3 cups walnut halves
FOR THE GLAZE:
Chopped toasted walnuts
4 tbs unsalted margarine or butter, cut into small pieces
1 tsp honey
2 oz bittersweet chocolate, chopped

MAKE THE CAKE---Heat oven to 350 degrees. Coat bottom and sides of a 9" round cake pan with cooking spray and line with parchment paper. Put walnuts, cinnamon and 1/4 cup sugar in a food processor or blender, pulse until finely ground but not powdery. Whisk egg yolks, zest and vanilla in a bowl. Beat egg whites and salt in a bowl until foamy. Beat in remaining sugar until soft peaks form, 8 min.
-Fold in yolk mixture and dates, then fold in ground walnut mixture. Scrape batter into pan. Bake until cake is golden and done, 25 min. Let cool in pan then invert cake onto a platter. MAKE THE GLAZE---Put chocolate, margarine and honey in a microwave bowl, cover with plastic wrap, microwave until margarine melts, 2 min. Whisk until smooth. Cool slightly, then pour over cake. Top with walnuts, then SERVE...
