[SimplifyMe] (Coriander) Glazed Carrots---w/ Orange

 

CORIANDER GLAZED CARROTS                       Makes 6 servings.

1/4 cup chopped cilantro or parsley
3 tbs light brown sugar
1/2 cup orange juice
1 tsp coriander seeds, lightly crushed
Salt and Pepper
2 tbs lime juice
2 pounds baby carrots, preferably rainbow, tops trimmed
2 tbs unsalted butter

Melt butter in a skillet. Add coriander seeds, toast 30 seconds. Add carrots, then stir in orange and lime juices, brown sugar, 1/4 cup water, 1/2 tsp salt and pepper to taste. Bring to a boil, then cover, reduce heat. Simmer until carrots are almost tender, 15 min.
-Uncover increase heat, cook until liquid is reduced, 10 min. Transfer to a platter, sprinkle with cilantro, then SERVE...
