SLOWCOOKER VEGGIE STEW
MAKES 8 SERVINGS.
1 pound dried white beans, picked through
8 cups chicken broth
1 onion, peeled, chopped
3 carrots, peeled, chopped
2 ribs celery, chopped
6 cloves garlic, chopped
8 sprigs thyme
1 bay leaf
1 pound spicy Italian sausage, casings removed, shaped into meatballs
1 bunch spinach, trimmed
Juice of 1/2 lemon
Crusty bread
In a slowcooker, stir together beans, broth, onion, carrots, celery, garlic, thyme, bay leaf. Cover cook on high until beans are nearly tender 3 1/2 hours. Place sausage meatballs on top of beans. *Cover cook until meatballs are no longer pink 25 min. Discard thyme sprigs and bay leaf. Stir in spinach, cover let stand until spinach wilts. Stir in juice, season. SERVE with bread & ENJOY...
