SHRIMP VEGGIE NOODLES
MAKES 6 SERVINGS.
2 cups seafood stock
8 oz bottle clam broth
1 tbs tomato paste
3 tbs oil
12 oz fidelini noodles, broken into 2" lengths
1 red bell pepper, sliced
3 cloves garlic, chopped
1 tsp paprika
1 cup frozen peas
1 pound shelled deveined shrimp
1/2 cup parsley, chopped
1 lemon, cut into 6 wedges
In pan, heat stock and broth to simmering. Whisk in tomato paste. In skillet, heat oil. Add noodles, cook until golden. Add bell pepper, garlic, 1/2 tsp paprika and salt. Cook 3 min. Add broth mixture and peas. Heat to boiling, simmer until noodles are tender. *Heat broiler. Toss shrimp with 1/2 tsp paprika. Arrange over noodles. Broil until shrimp are cooked though. Garnish with parsley and lemon wedges. SERVE & ENJOY...
