SALMON TOMATO PASTA
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
1 lemon
4 oz cream cheese
1/2 cup milk
2 tbs capers, drained, chopped
2 tbs snipped chives
2 tbs horseradish, drained
12 oz bowtie pasta
4 oz smoked salmon, torn into ribbons
1 cup halved grape tomatoes
Heat pot of salted water to boiling. Into bowl, from lemon, grate 2 tsp peel and squeeze 1 tbs juice. To same bowl, add cream cheese, milk, capers, chives, horseradish, salt and pepper, whisk until combined. *Cook pasta as label directs. Reserve 1/3 cup cooking water, add to cream cheese mixture. Drain pasta, transfer along with salmon and tomatoes to bowl with cream cheese mixture. Toss. SERVE & ENJOY...
