[SimplifyMe] Roasted Pepper {Pasta} TNT

 

ROASTED PEPPER PASTA
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.

6 oz rotini pasta
12 baby bell peppers
3/4 cup diced mozzarella cheese
2 tbs olive oil
2 tsp white wine vinegar
2 garlic cloves, minced
1/2 cup chopped parsley
Salt and Pepper
4 skinless boneless chicken breast halves

Heat broiler. Cook pasta, drain. Place in a bowl, keep warm. Cut bell peppers in half lengthwise, discard seeds and membranes. Place peppers on a foil lined baking sheet, flatten. *Broil until blackened. Let stand 5 min. Peel, cut into strips. Add peppers and cheese to pasta. Combine oil, vinegar and garlic, stir into pasta mixture. Stir in parsley and salt. *Heat a skillet. Coat pan with cooking spray. Sprinkle chicken with salt and pepper, saute until done. Slice chicken. SERVE over pasta & ENJOY...
