NUTTY OVEN-FRIED CHICKEN
MAKES 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
3 tbs pine nuts, toasted
1 tbs cornmeal
1/2 tsp onion powder
1/2 tsp baking soda
1/2 tsp chopped rosemary leaves
1/2 cup flour
1/4 cup grated Parmesan cheese
1/2 cup nonfat buttermilk
1 egg white
4 skinless boneless chicken breast halves
Salt and Pepper
2 tbs canola oil
Heat oven to 425 degrees. Combine first 3 ingredients in a chopper. Pulse until ground. Combine nut mixture, baking soda and next 3 ingredients in a dish. Combine buttermilk and egg white in a dish.*Dip chicken in buttermilk mixture, sprinkle with salt and pepper. Dredge in flour mixture. Heat a skillet. Add oil. Add chicken, saute until browned. Turn chicken over. Place pan in oven, bake 10 min. or until chicken is done. SERVE & ENJOY...
