[SimplifyMe] Nutty Bacon {Candy} TNT

 

NUTTY BACON CANDY
MAKES 1 1/2 POUNDS.

1 stick unsalted butter
16 slices bacon
1 1/2 cups sugar or Splenda
3/4 cup light corn syrup
1 1/2 cups mixed nuts
Salt
1 1/2 tsp vanilla
1 1/2 tsp baking soda

Line a baking sheet with foil, butter it. Cook bacon in a skillet until crisp. Drain on paper towels, break each slice in half. Combine sugar, corn syrup and 1/2 cup water in a pan. Cook until a candy thermometer registers 260 degrees. *Remove from heat, add butter, nuts and salt. Stir, continue cooking until syrup turns golden and candy thermometer registers 285 degrees. Stir in bacon, vanilla, and baking soda. Cook until mixture darkens slightly. *Pour mixture onto baking sheet, then tilt to spread in into a thin layer. Let cool, then break into pieces.
