CORN HAM FRITTATA
MAKES 6 SERVINGS.
8 eggs
1/4 cup lowfat milk
Salt and Pepper
2 tbs unsalted butter
1 1/2 cups chopped ham
10 oz bag frozen corn, thawed
1 tbs chopped thyme
4 green onions, sliced
1 cup shredded cheddar cheese
Heat broiler. In a bowl, whisk eggs and milk until combined. Whisk in salt and pepper. Melt butter in a skillet. Add ham, saute until beginning to turn golden. Add corn and thyme, saute until corn is warmed through. *Pour in egg mixture, top with green onions and cheese, cook until bottom is firm. Transfer skillet to oven, broil until top is set and edges are beginning to brown. Remove from oven, cover let stand 5 min. SERVE warm or at room temp & ENJOY...
