CHICKEN BAGEL SANDWICHES
MAKE 4 SERVINGS OR HALF RECIPE FOR 2 SERVINGS.
8 slices bacon
8 oz pkg cream cheese
3/4 cup toasted walnuts, chopped
6 green onions, chopped
Pinch nutmeg
2 boneless skinless chicken breasts, split into 4 cutlets
Salt and Pepper
4 tbs oil
Juice of 1/2 lemon
1 tbs white wine vinegar
2 tsp Dijon mustard
2 tsp honey
1 green apple, sliced
2 ribs celery with leafy tops, sliced
1 onion, sliced
1 bunch watercress, trimmed
4 bagels, split, toasted
Heat oven to 375 degrees. Arrange bacon on a broiler pan, bake until crisp 14 min. Let cool, then chop. In a bowl, mix bacon, cream cheese, nuts, green onions and nutmeg. *Season chicken with salt and pepper. In a skillet, heat 1 tbs oil. Add chicken, cook until browned and cooked through. In a bowl, whisk juice, vinegar, mustard, honey and remaining oil. Toss with apple, celery, onion and watercress. Season. *Slather bagel bottoms with cream cheese mixture. Top with a cutlet and salad, then add bagel tops. SERVE & ENJOY...
