BACON SQUASH PASTA
MAKES 6 SERVINGS.
1 1/4 pounds peeled butternut squash, cut into 4 chunks
8 oz bacon, chopped
3 cloves garlic, chopped
1/2 tsp crushed red pepper
2/3 cup half and half
6 sage leaves, chopped
1 pound cavatappi pasta
1/2 cup grated Parmesan cheese
Heat pot of salted water to boiling, shred squash. In skillet, cook bacon until crisp, transfer bacon to plate. Drain and discard all but 2 tbs fat from skillet. *To skillet, add garlic and red pepper. Cook 30 seconds. Add squash and salt. Cook mashing frequently. Stir in half and half and sage. Cook 2 min. Remove from heat. *Cook pasta as label directs. Reserve 1/2 cup cooking water. Drain pasta, return to pot. Add bacon, squash mixture, cheese, cooking water and salt, toss. SERVE & ENJOY...
